Air dried ham is superb with scrambled eggs.  It turns a simple dish into an experience.

Eat for breakfast, for supper or even as a tapas dish.

Preparation Time: 5 Mins

Cooking Time: 5 Mins

Total Time: 10 Mins

Ingredients

For 1 serving…

 gms               Ham  - air-dried - Parma, Bayonneor Serrano, slices

2                    Eggs        

                     Pepper      

                     Salt          

30 gms            Butter       

To serve

1 slice             Toast or fried bread  

Method

Beat the eggs with the salt and pepper.

Heat the butter in a saucepan until just melted.  Pour in the beaten egg and stir over a gentle heat until just set.  It should be solid but not dried.  Transfer it to a plate and place the slices of ham on top.  They should pick up a little bit of heat from the egg.

Serve at once on toast or fried bread.

Wine recommendations

Wine does not go well with eggs but a white would be better than red.
