It is not the eggs that are green but, rather, the stuffing. This comes from the green butter – a delicious herby butter – used in making the stuffing. They make a delicious canapé or hors d’œuvre dish. Preparation Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins Ingredients For 1 serving… 10 gms Green butter ½ tsp Curry powder 1 pinch Paprika ½ tsp Mustard - English, made 1 Egg - hard-boiled 1 pinch Cayenne ½ tsp Lemon juice For the green butter 60 gms Butter 1 leaf Spinach - chopped 3 sprigs Parsley - chopped 2 sprigs Mint - chopped 2 leaves Sage - chopped 1 pinch Salt Method To make the green butter… Put the butter in a bowl. Add the chopped herbs and with a wooden spoon beat them until the butter is soft and the herbs evenly worked into it. Alternatively, put all the ingredients in a food processor and blend until they are all amalgamated. Note that there will be enough green butter for about 4 eggs. To stuff the eggs… Halve the eggs and scoop out the yolks. Blend these with the green butter, mustard, curry powder, lemon juice, cayenne and paprika. Wine recommendations A white wine.
