These coriander mushrooms are a variation of mushrooms à la Grecque but one that is simple with a delightful spicy flavour. Serve as a starter, tapas dish, or a vegetable to accompany white meat. It can be served cold or hot. Preparation Time: 10 Mins Cooking Time: 7 Mins Total Time: 1 Hr Ingredients For 2 servings… 170 gms Mushrooms - button 1½ tbs Lemon juice 1½ tbs Olive oil 1 tsp Coriander seeds - crushed 2 Bay leaves Pepper Salt To garnish 1 tbs Coriander - fresh - chopped Method Trim the mushroom stalks. Brush them with 1 tbs of lemon juice. Heat 1 tbs of olive oil in a saucepan and cook the coriander seeds for a few seconds over a low heat. Add the mushrooms and bay leaves. Season. After a minute, cover the pan and cook for just another 5 minutes. Pour the mushrooms with their cooking juices into a serving dish and sprinkle them with the remainder of the oil and lemon juice and the fresh coriander. Serve chilled or, if preferred, hot.
