Mushrooms with tomato and orange sauce is a variation of mushrooms à la Grecque.  Quite delicious, it tastes of the sun.

Serve as a starter or as a tapas dish.

It can be prepared in advance.

Preparation Time: 10 Mins

Cooking Time: 13 Mins

Total Time: 1½ Hrs

Ingredients

For 4 servings…

340 gms          Mushrooms  - small button      

¼                   Lemon      

4 tbs               Olive oil    

3 tbs               Water       

1 clove            Garlic  - chopped     

340 gms          Tomatoes  

½                   Orange  - zest of      

1                    Orange  - juice of     

1                    Bay leaf     

2 sprigs           Thyme      

1 sprig            Parsley     

                      Pepper      

                      Salt          

1 tsp               Honey  - runny        

Method

Rub the mushrooms with the lemon quarter.

Simmer the remaining ingredients for 10 minutes and then add the mushrooms and cook for a further

3 minutes.  Remove the mushrooms to a dish.

Boil down the sauce to a strongly-flavoured purée.  Adjust the seasonings and then remove the thyme and parsley stalks.  Pour the sauce over the mushrooms and chill.  Serve from the dish or transfer to ramekins.
