Mushrooms with tomato and orange sauce is a variation of mushrooms à la Grecque. Quite delicious, it tastes of the sun. Serve as a starter or as a tapas dish. It can be prepared in advance. Preparation Time: 10 Mins Cooking Time: 13 Mins Total Time: 1½ Hrs Ingredients For 4 servings… 340 gms Mushrooms - small button ¼ Lemon 4 tbs Olive oil 3 tbs Water 1 clove Garlic - chopped 340 gms Tomatoes ½ Orange - zest of 1 Orange - juice of 1 Bay leaf 2 sprigs Thyme 1 sprig Parsley Pepper Salt 1 tsp Honey - runny Method Rub the mushrooms with the lemon quarter. Simmer the remaining ingredients for 10 minutes and then add the mushrooms and cook for a further 3 minutes. Remove the mushrooms to a dish. Boil down the sauce to a strongly-flavoured purée. Adjust the seasonings and then remove the thyme and parsley stalks. Pour the sauce over the mushrooms and chill. Serve from the dish or transfer to ramekins. Wine recommendations A white wine.
