The wonderful dish of stuffed mushrooms makes an excellent starter for a dinner. Alternatively, it can be served as an interesting and tasty tapas dish. Preparation Time: 15 Mins Cooking Time: 20 Mins Total Time: 35 Mins Ingredients For 4 servings… 12 Mushrooms - 5 cm wide 1 tbs Lemon juice 10 gms Butter - melted For the filling Stems from the mushrooms - chopped finely 1 bunch Spring onions - chopped finely 1 clove Garlic - chopped finely 1 tbs Olive oil 10 gms Butter 40 gms Walnuts - chopped roughly 110 gms Spinach - cooked 60 gms Feta cheese 30 gms Cheddar ½ tbs Dill - chopped 10 grinds Pepper - freshly ground, black ½ tsp Salt Method Remove the stems from the mushrooms and chop up them. To make the fillings… Sauté the spring onions, garlic and mushroom stems slowly in the olive oil and butter until softened and golden. Then add the walnuts and toss for 1 minute. Add the spinach and cook for 2 minutes, stirring well - until no liquid remains in the pan. Turn into a bowl and stir in the cheeses, dill, salt and pepper. To prepare and cook the mushrooms. Brush the top of the mushrooms with the mixed lemon juice and butter. Divide the filling between them, mounding it well, then place them side by side in a buttered baking tin. Bake in a hot oven at 200°C for 10 minutes so that the fillings are heated through the tops are brown. Wine recommendations An aromatic white wine is preferred.
