This dish of mushrooms cooked with garlic may be served hot or cold.  It makes an excellent, easy to prepare starter or tapas dish.  In Spain they are often served with crusty bread used to mop up the garlicky oil.

Ingredients

For 4 servings…

½ tsp             Chilli flakes

5 cloves           Garlic  - chopped     

1 tbs               Lemon juice            

250 gms          Mushrooms  - button 

4 tbs               Olive oil    

2 tbs               Parsley  - flat-leaf, chopped     

                      Pepper      

                      Salt          

Method

Trim the mushroom stems.  Heat the oil in a frying pan and sauté the mushrooms with the garlic and the chilli flakes over a medium heat, turning them over.  Adding salt and pepper.  The mushrooms will absorb the oil at first, then will release it with their juices.  Add the lemon juice and lower the heat and cook, uncovered, until the mushrooms are very soft and the juices have almost evaporated and the oil sizzles through.  The cooking will take about 15 to 20 minutes.  Stir in the parsley and serve hot or cold.
