This a an extremely simple but delicious tapas dish.  As well as the mushroom and garlic flavours it has a bit of spicy heat.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 15 Mins

Ingredients

For 4 servings…

110 gms           Mushrooms  - small to medium 

1 tbs               Olive oil     

4 cloves           Garlic  - sliced thinly  

1                    Chilli  - red, hot, dried - chopped

70 ml              Sherry  - dry

3 tbs               Stock  - chicken       

1 pinch            Paprika  - smoked     

                     Pepper  - freshly ground, white 

                     Salt          

Method

Cut larger mushrooms in half.

Heat the oil in a heavy-based frying pan and add all the mushrooms, garlic and chilli.  Toss to coat them with the oil, then cook for 2 minutes.  Add the sherry, stock and a pinch of paprika and cook for a further 2 minutes.  Then season to taste.

Serve the mushrooms warm.
