This is a lovely, uncomplicated, version of Jerusalem artichoke soup that comes from South-West France.

Preparation Time: 15 Mins

Cooking Time: 45 Mins

Total Time: 1 Hr

Ingredients

1                    Onion  - large, chopped          

30 gms            Butter       

450 gms          Jerusalem artichokes  - peeled and sliced 

90 cl               Stock  - chicken       

                     Pepper      

                     Salt          

140 ml             Cream  - double      

1 tbs               Parsley  - chopped    

Method

Sweat the onion in a little butter until it is soft and transparent and then add the artichokes.  Mix them in the onion and butter for a few minutes and then add the stock and seasoning.  Bring slowly to the boil and allow it to simmer for 30 minutes.

Liquidise or sieve the soup and return it to the pan.  Reheat it and, just before serving, add the cream and parsley and recheck the seasoning.
