Some people may be put off simply by the thought of Brussels sprouts soup.  In reality, it does not taste as expected and is quite exquisite.  It is also easy to produce.

Preparation Time: 20 Mins

Cooking Time: 30 Mins

Total Time: 1 Hr

Ingredients

For 4 servings…

80 gms            Fat  - pork - diced    

600 gms          Brussels sprouts  - cut into 2    

20 cl               Water       

1 l                  Stock  - vegetable    

                      Pepper      

                      Salt          

4 tbs               Crème fraîche          

To serve

  Parmesan cheese

Method

Dry fry the pork fat for five minutes in a heavy frying pan.  Add the Brussels sprouts and the water and cook for 20 minutes.  Liquidise the spouts (with any liquid) and put the resulting purée into a saucepan with the stock and seasoning.  Bring to the boil.

Pour the liquid into a soup tureen, add the crème fraîche and serve accompanied by the parmesan cheese.

A white wine or a lightish red.
