The cabbage soup comes from Portugal where it is known as “Caldo verde.”  It is simplicity itself – being more rustic than haut cuisine.  Any cabbage can be used but it must be finely shredded and not over-cooked.

Preparation Time: 10 Mins

Cooking Time: 30 Mins

Total Time: 40 Mins

Ingredients

230 gms          Cabbage  - shredded 

3                    Potatoes  - medium  

90 cl               Water       

                     Salt          

                     Pepper      

2 tbs               Olive oil    

Method

Boil the potatoes in the water with a teaspoonful of salt.  Remove, mash and return to the water, along with the oil and cabbage.  Boil, uncovered, for 3 minutes.  Season to taste and serve.

Wine recommendations

A white wine or a light red.
