Carrots and orange are an interesting combination that produces a distinct and delicious soup. It can be served hot or, in the summer, cold. Preparation Time: 15 Mins Cooking Time: 40 Mins Total Time: 55 Mins Ingredients For 8 servings… 110 gms Butter 1 Onions - chopped 1360 gms Carrots - sliced 60 cl Orange juice 40 cl Stock - chicken 1 Lemon - juice of 4 sticks Celery - chopped 1 bunch Parsley 2 Bay leaves 30 cl Cream - double Pepper - freshly ground, black Salt Method Melt the butter in a large saucepan and, in this, gently sauté the onions. When translucent, add the carrots and turn altogether. Add the orange juice, stock and the lemon juice. Then add the celery, parsley and bay leaves. Simmer until the carrots are tender. Remove the bay leaves and liquidise the soup. Return it to the saucepan. Add the cream and gently reheat. Season with salt and pepper. Wine recommendations A dry white.
