The flavour of the soup is produced from a blend of the sweetness of the parsnips and the spices. It is an excellent warming soup, ideal for a cold winter’s day. Preparation Time: 20 Mins Cooking Time: 30 Mins Total Time: 50 Mins Ingredients For 6 servings… 3 tbs Olive oil 680 gms Parsnips - chopped roughly ½ Onion - chopped finely 1 clove Garlic - crushed 1 tsp Chilli flakes 2 tsp Turmeric 1 tsp Cumin - ground 1 tsp Coriander - ground 70 cl Stock 3 tbs Cream - single Pepper - freshly ground, black Salt Method Heat the oil in a large pan and gently fry parsnips, onion and garlic until lightly browned. Stir in the spices and then add the stock. Bring to the boil and simmer until the parsnips are soft. Liquidise the vegetables, return to the pan, reheat, stir in cream and season with salt and pepper. Wine recommendations Either a fortified or a red wine.
