The secret of a good tomato soup is to start with good, well ripe tomatoes and then to soften them in butter.  There is nothing better that a hot tomato soup on a cold day!

Preparation Time: 20 Mins

Cooking Time: 40 Mins

Total Time: 1 Hr

Ingredients

For 4 servings…

30 gms            Butter       

3                    Shallots  - chopped finely        

2 cloves           Garlic  - crushed      

680 gms          Tomatoes  - chopped

1 bunch           Thyme      

1 bunch           Parsley     

1                    Bay leaf     

                      Pepper      

                      Salt          

110 cl              Stock  - chicken       

110 ml             Cream  - double      

Method

Soften the shallot and garlic in the butter without browning them.  Add the tomatoes and a bundle made from the herbs.  Season.  Cook until reduced to a pulp, add the stock and simmer for 30 minutes.  Remove the herbs, blend the soup and return to a clean pan.  Add the cream and warm through.  Adjust the seasoning to taste and serve.

Wine recommendations

The perfect wine would be a spicy white Burgundy such as a Meursault.  It will also take a light red such as a Beaujolais and even a Madeira or Sherry.
