Aubergine fitters drizzled with honey make an excellent starter or tapas dish.  There is a delicious combination of savoury and sweetness.

Preparation Time: 10 Mins

Cooking Time: 6 Mins

Total Time: 2 Hrs

Ingredients

For 4 servings…

2                    Aubergines

600 ml             Milk         

                     Flour        

                     Salt          

                     Honey  - runny        

For deep frying

                     Oil           

Method

Peel the aubergines and cut them crossways into slices about 7.5 mm thick.  Put them in a bowl and cover them with the milk.  Place a small plate on top to hold them down.  Let them soak for 1 to 2

hours then drain them and discard the milk.

Cover a plate with plenty of flour mixed with a little salt.  Turn the aubergine slices in this so that they are entirely covered with flour and shake them to remove excess flour.

Heat the oil to 180°C.

Deep-fry the aubergine slices, turning the slices over so that they brown all over.  This will take about 3 minutes in total.  Cook the aubergine slices in batches, trying to keep the temperature of the oil as constant as possible.  When they are cooked, lift out the aubergines and drain them on kitchen towel.

Serve them hot with a dribble of honey.

A red wine or a robust dry white wine.
