This way of serving marrow bones is uncomplicated but delicious.  It can be served as a canapé, as a tapas dish or as a starter.  The method of cooking the marrow bones – roasting them - can be used when the marrow is required for other recipes.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

1 kg                Marrow bones  - cut across, 3 cm thick    

1 pinch            Salt          

4 slices            Bread  - artisan       

1 clove            Garlic       

To serve

  Parsley  - chopped

  Lemon zest  - grated        

Method

Preheat an oven to 220°C.

Line a baking sheet with foil and place the marrow bones cut-side-up on top of the foil.  Sprinkle with the salt and roast in the hot oven for 20 minutes.

Meanwhile, grill the bread slices on each side until browned.  Transfer the bread to a serving platter and rub one side of each slice with the garlic.

When the marrow bones have finished roasting, scrape out the marrow and spread on the toasts.  Sprinkle with the parsley and lemon zest.
