This is a typical, flavoursome tapas dish that is widely found in Spain.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 2½ Hrs

Ingredients

For 4 servings…

4                    Chicken thighs         

1 tbs               Paprika  - smoked     

150 ml             Brandy      

1 tbs               Lemon juice            

                     Salt          

                     Pepper  - freshly ground, black  

6 cloves           Garlic  - crushed       

2 tbs               Olive oil     

Method

Put the chicken bits in a bowl and then rub the paprika evenly over the skin.  Add the lemon juice, cover and let marinate in a refrigerator for 2 hours.

Heat the oil in a heavy-based frying pan until smoking, add the chicken and brown on all sides.  Reduce the heat, add the garlic and cook for a further 2 minutes.  Add the brandy, tilt the pan to catch the flame and burn off the alcohol until the flames subside.  Cover with a lid and simmer for 10 minutes.  Add salt and pepper to taste, then serve.

A red or a white wine - or, perhaps, a sherry.
