Cold chicken and garlic skewers |

This dish makes an excellent cold starter or tapas dish. It is succulent and brilliantly combines the flavours of the chicken, garlic and lemon. The garlic becomes soft and loses its pungency during the cooking. The presentation on skewers is unusual and interesting. Preparation Time: 20 Mins Cooking Time: 20 Mins Total Time: 1¾ Hrs Ingredients For 4 servings… 4 Chicken supremes 8 cloves Garlic - whole 4 slices Lemon 3 tbs Olive oil For decoration Rocket For the marinade 3 cloves Garlic - crushed 1 Lemon - juice of 6 tbs Olive oil 1 tbs Parsley - chopped finely Pepper - black, freshly ground Salt To drizzle Lemon juice Olive oil Method To prepare the marinade… Combine marinade ingredients in a bowl. Cut chicken into chunks and place in a bowl. Pour over the marinade. Leave for an hour in a fridge. To cook and present the chicken… Remove the chicken from the marinade and preserve the marinade. Heat 2 tbs of oil in a pan and fry chicken chunks until browned and cooked. Drizzle over a little of the reserved marinade and toss for two minutes more. Heat the remaining 1 tbs of oil in a separate pan and fry the garlic cloves gently for about five minutes until softened and slightly charred. Briefly fry the lemon slices in the same pan as the garlic. Thread the chicken chunks, garlic cloves and lemon slices on to skewers and leave to cool. Drizzle over a little olive oil and lemon juice.
