As the chicken breasts (supremes) are marinated with lemon juice, they have a sharpish taste that is complemented by the simple fresh tomato sauce.  These kebabs can be served as a tapas dish, as a starter or even as a main course.  They are particularly good when they have been cooked on a barbecue.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 4 Hous

Ingredients

For 8 servings…

2                    Chicken supremes    

2 tbs               Olive oil    

1 clove            Garlic  - crushed      

1 tbs               Lemon juice            

1 tbs               Oregano    

                      Pepper      

                      Salt          

8 cubes           Bread       

For the sauce

3 tbs               Tomato  - chopped finely        

2 tbs               Cucumber  - chopped finely     

1 tbs               Onion  - chopped finely          

1 tbs               Vinegar  - Sherry      

1 small glass     Water       

1 tbs               Breadcrumbs  - fresh 

Method

To prepare the chicken kebabs…

Cut each chicken breast lengthways into 4 - giving 8 pieces in all.  Feed the strips of chicken on to skewers, lengthways.  Marinade them for a few hours in the oil, garlic, lemon and oregano and season with salt and pepper.

To make the sauce…

Mix all the sauce ingredients together and leave them in a cool place to merge the flavours and swell the breadcrumbs.

To cook the kebabs…

Grill the kebabs on a barbecue, griddle or under a grill.  Serve the kebabs with a cube of bread speared on the end and a spoonful of the sauce.
