These “crostini” come from Italy and often served as a starter in Tuscany and Umbria.  It is a delicious way to start a meal.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

230 gms          Chicken livers          

                     Flour        

1 slice             Ham         

60 gms            Butter       

3 tbs               Stock  - chicken       

                     Pepper      

                     Salt          

1 squeeze         Lemon juice            

4 slices            Baguette  - crusts removed     

Method

Chop the chicken livers into dice and dredge them with flour.  Cut the ham into small pieces, brown it a little in butter and then put the chicken livers into the same pan.  Cook them gently nut so that they do not fry.  After a few minutes add a teaspoonful of the stock, salt, a very small amount of pepper and a drop of lemon juice.  Cover the pan.  The livers will be perfectly cooked in about 10 minutes.

Fry the croûtons of bread in butter.  They should be crisp outside but still soft inside.  Arrange them on a dish and pour the chicken mixture over them.
