These chicken wings make an idyllic tapas dish.  They are easy to eat – using fingers – and full of flavours and sensations.

Preparation Time: 20 Mins

Cooking Time: 10 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

50 gms            Breadcrumbs  - fresh 

50 gms            Flour        

16                  Chicken wings         

                      Pepper  - freshly ground, black 

                      Salt          

2 tsp               Chilli flakes

4 cloves           Garlic  - chopped finely          

1 handful         Parsley  - chopped    

1                    Lemon  - juice of      

For deep frying

                      Oil           

Method

Mix together the breadcrumbs and flour and dust the wings with this mixture.

Heat the oil to 180°C and deep-fry the wings for 10 minutes, until cooked through and golden brown.  Remove, drain on kitchen towel and season with salt and pepper.

In a mixing bowl combine the chilli flakes, garlic, parsley and lemon juice.  Add the chicken and stir well.  Serve immediately.
