This dish of chicken wings comes from the Middle East and makes an excellent starter or tapas dish.  It is less spicy that much Middle Eastern cuisine but no less delicious.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 5 Hrs

Ingredients

For 6 servings…

3 cloves           Garlic  - crushed with salt       

¼ tsp             Salt          

12                  Chicken wings         

4                    Limes  - juice of       

1 pinch            Cayenne    

Method

Crush the garlic with the salt until pulpy, then rub a little on each chicken wing.  Put them into a bowl and pour the lime juice over them.  Leave for at least 1 hour and preferably for 4 or 5 hours.  Turning them occasionally so all parts get impregnated with the juice.

Put the wings into a pan in one layer.  Pour over the marinade and then just enough water to cover them.  Bring quickly to the boil and then lower the heat and simmer for 12-15 minutes, uncovered, until the chicken is done and most of the sauce reduced.

Transfer the wings to a serving dish, scraping up all the juices from the pan and pouring them over the top.  Sprinkle with a little cayenne.
