These chicken wings have a distinct Eastern flavour but make an excellent tapas dish – or even a starter or main course.  As a tapas dish, they can be served on their own; as a main course they go well with rice.

Total Time: 65 Mins

Ingredients

For 4 servings…

12                  Chicken wings         

2 tbs               Olive oil    

For the marinade

1 tbs               Ginger  - grated       

3 cloves           Garlic  - crushed      

½                   Lemon  - grated rind and juice of

6 tbs               Soy sauce  

3                    Anchovy fillets  - mashed        

1 tsp               Chilli powder           

1 tbs               Honey  - runny        

Method

Mix together the ginger, garlic, lemon zest and juice, soy sauce, anchovy paste, chilli and honey.  Add the chicken wings and toss to coat well.  Let the wings marinate at room temperature for 30 minutes.

Heat a sauté pan over medium heat until hot.  Pour in the oil and warm it until it ripples.  Then add the chicken wings (including their marinade) and cook them, stirring occasionally, for 20 minutes, or until golden and the liquid is beginning to thicken.  Increase the heat and reduce the liquid for about 5 minutes or until it has glazed the wings.

Remove from the heat and serve the wings hot or at room temperature.

Variations

Instead of chicken wings, chicken thighs or drumsticks can be used.
