Although chorizo comes in many sizes and flavours, the breakfast-sausage-sized ones work best for this recipe.  The paprika in the sausage gives the dish a rich colour and pungent flavour.  It makes a perfect tapas dish.

Preparation Time: 5 Mins

Cooking Time: 6 Mins

Total Time: 11 Mins

Ingredients

For 4 servings…

1 tbs               Olive oil     

 gms               Chorizo sausage  - cut into 1 cm slices    

100 ml             Wine  - red 

To serve

                     Bread  - crusty         

Method

Heat the oil in a heavy-based frying pan until smoking.

Add the chorizo and cook for 1 minute.

Reduce the heat, add the wine and cook for 5 minutes.  Transfer to a serving dish and set aside to develop the flavours.

Serve warm with crusty bread.

A dry sherry or aromatic white wine.
