This halloumi dish is served with a spicy, intensely-flavoured Middle Eastern sauce.  The cheese can be

grilled or barbequed – or even fried.

The dish can be served as a tapas or meze dish or as a starter.

Preparation Time: 10 Mins

Cooking Time: 4 Mins

Total Time: 15 Mins

Ingredients

For 4 servings…

250 gms           Halloumi  - cut into ½ cm slices

1 tbs               Olive oil     

  Red zhoug      

For the red zhoug

100 gms           Peppers  - red - cooked          

1                    Chilli  - red - chopped

1 clove             Garlic        

1 bunch            Coriander  - chopped 

¼ tsp              Cumin  - ground       

1 tbs               Pomegranate molasses           

Method

Heat a grill or get a barbeque hot.

Brush the halloumi with olive oil and grill the pieces for 1-2 minutes on each side until charred.  Serve

immediately with the zhoug.

To make the red zhoug…

Put all the ingredients in a food processor and blend until smooth.  Spoon onto a serving dish or

individual plates.

A robust red or white wine.
