Meatballs are a significant part of the cuisine of the Mediterranean and Middle East.  They can be served with a number of different sauces but here is one with tomato sauce from Greece.

Preparation Time: 15 Mins

Cooking Time: 20 Mins

Total Time: 45 Mins

Ingredients

For 4 servings…

250 gms          Mince       

1                    Onion  - grated       

1½ slices         Bread  - crusts removed - soaked in water

                      Pepper      

1 tsp               Salt          

2 tbs               Vinegar  - white wine 

                      Oregano    

1½ tbs            Flour        

70 ml              Tomato juice           

70 ml              Olive oil    

70 ml              Stock  - meat          

2 cloves           Garlic  - crushed      

½                   Pepper  - red - chopped         

2 tbs               Parsley  - chopped    

Method

Mix the mince with the onions, the bread (squeezed dry), the pepper, salt, 1 tablespoon of vinegar and the oregano.  Blend this mixture and mould into eight meat balls.  Coat each one with flour and fry them in the oil.  Remove them and keep them warm.

Add the flour to the oil and stir it until brown.  Pour in the tomato juice, the stock, the crushed garlic, the red pepper, 2 tablespoons of vinegar and parsley.  Allow the sauce to come to the boil and pour this over the meat balls.

Wine recommendations

A red wine is the most likely choice.
