"Pinchitos" is a term commonly used in Spanish cuisine to refer to skewered and grilled meat dishes.  The word "pinchito" translates to "little skewer" or "little prong" in English.  These skewers typically consist of small pieces of meat and cooked on a grill or barbecue.

In Spain, Pinchitos are commonly served as tapas and where they are enjoyed alongside other small dishes.

This particular version originates from Andalusia and is richly spicy.

Ingredients

For 4 servings…

800 gms           Belly pork  - cut into 2 cm cubes

4 cloves           Garlic  - crushed       

2                    Chillies  - hot, dried, chopped   

1 tsp               Paprika  - smoked     

1 tsp               Cumin  - ground       

1 tsp               Fennel seeds  - ground           

2 tbs               Parsley  - chopped    

1 tbs               Coriander  - chopped 

1                    Lemon  - zest and juice of       

50 ml              Sherry  - dry

Method

Place the pork cubes in a mixing bowl and add all the remaining ingredients.  Mix well, cover with cling film and refrigerate overnight.

Heat a barbeque or grill until really hot.

Thread the pork on to skewers and grill for 3 minutes on each side.  Do not overcook.  Remove the kebabs from the heat and allow them to rest for a few minutes before serving.
