Preparation Time: 15 Mins Cooking Time: 6 Mins Total Time: 8 Hrs Ingredients For 4 servings… 800 gms Belly pork - cut into 2 cm cubes 4 cloves Garlic - crushed 2 Chillies - hot, dried, chopped 1 tsp Paprika - smoked 1 tsp Cumin - ground 1 tsp Fennel seeds - ground 2 tbs Parsley - chopped 1 tbs Coriander - chopped 1 Lemon - zest and juice of 50 ml Sherry - dry Method Place the pork cubes in a mixing bowl and add all the remaining ingredients. Mix well, cover with cling film and refrigerate overnight. Heat a barbeque or grill until really hot. Thread the pork on to skewers and grill for 3 minutes on each side. Do not overcook. Remove the kebabs from the heat and allow them to rest for a few minutes before serving. Wine recommendations A robust red wine.
