This is s simple quick way of preparing broad beans.  The recipe suggests Serrano ham but almost any ham or bacon will suffice.  It can be served as a vegetable, as a tapas dish, as a starter or as a supper dish.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 25 Mins

Ingredients

230 gms          Broad beans  - shelled

2 slices            Ham  - Serrano - cut into strips 

2 tbs               Olive oil    

1 tbs               Parsley  - chopped    

                      Pepper      

                      Salt          

Method

Blanch the broad beans in boiling, salted water for 2 minutes.

Warm the oil in a small pan.  Add the ham and fry it for a minute or two.  Stir in the parsley and the beans.  Cover and cook gently for 5 minutes.  Taste and add salt and pepper.

Serve on individual plates or on a single serving dish.
