This cauliflower dish comes from Spain and is traditionally served as a tapas dish.  It does, however, make an excellent supper dish or as an accompaniment for meat or fish.  The inclusion of garlic and paprika gives the cauliflower a flavour that is quite different from the flavours usually associated with the vegetable in the UK.

Preparation Time: 10 Mins

Cooking Time: 10 Mins

Total Time: 20 Mins

Ingredients

For 4 servings…

1                    Cauliflower  - small

                      Salt

4 tbs               Olive oil

2 cloves           Garlic  - chopped

1 tsp               Paprika

1 tbs               Parsley  - chopped

1 tbs               Vinegar  - Sherry

                      Pepper

Method

Divide the cauliflower into bite-sized florets.  Cook it in boiling, salted water until soft.  Drain.

Heat the oil in a frying pan.  Turn the garlic in the hot oil until it softens and takes a little colour.  Sprinkle on the paprika and add the cauliflower.  Fry for a few minutes until the cauliflower browns a little.  Sprinkle on the parsley, vinegar and salt and pepper.

Serve hot or cold.
