These courgette fritters are absolutely irresistible. They make a wonderful meze dish and are excellent served with tzatziki or tahini. Preparation Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins Ingredients For 4 servings… 4 Courgettes - cut into strips or diagonal slices For the batter 150 gms Flour - self-raising 1 tsp Baking powder 1 Egg yolk 175 ml Water - tepid 1 tbs Olive oil Pepper - freshly ground, black Salt For frying Oil To serve Paprika Lemon wedges Method To make the batter… Whisk the batter ingredients together to make a smooth batter. Add a drop more water if it looks too thick. Season with a little salt and pepper. To cook the fritters… Heat the oil to 180°C or until it reaches a temperature so that, if a teaspoon of batter is dropped in, it bubbles and rises to the top. Mix the courgettes into the batter mix to coat them evenly. Take out a few pieces of courgette at a time, shake off excess batter and lower them into the hot oil. Fry them for around 5 minutes, turning occasionally until crisp and golden. Drain on kitchen towel. Sprinkle the courgettes with some sea salt and a dusting of paprika. Serve with lemon wedges.
