Courgettes sautéed with tomatoes makes a lovely cold vegetable tapas dish in a Middle Eastern style. Alternatively, it can be served to accompany fish or kebabs. Preparation Time: 10 Mins Cooking Time: 15 Mins Total Time: 25 Mins Ingredients For 6 servings… 910 gms Courgettes 6 tbs Olive oil 3 cloves Garlic - chopped finely 450 gms Tomatoes - small, skinned and halved 1 tbs Coriander seeds - crushed Pepper - freshly ground, black Salt Parsley - chopped Lemon juice Method If the courgettes are small, cut them down the middle, lengthways; otherwise cut them into thick slices. Heat the oil, add the garlic and sauté it for 30 seconds — taking care not to burn it. Add the courgettes and fry for another 3 minutes - turning frequently to colour them. Add the tomatoes, stir for 1 minute and then press them slightly to release their juices. Sprinkle on the coriander seeds, salt and pepper, cover the pau and simmer, very gently, for about 10 minutes until the courgettes are done — but nut mushy. Put into a serving dish, allow to cool and then sprinkle with parsley and lemon juice. Wine recommendations Probably white, but could be red.
