Aubergines marinated with chillies, garlic, capers and mint is a lovely starter or tapas dish.  The

mint gives it a particularly Mediterranean flavour.

Ingredients

For     6  portions

600 gms           Aubergines  - cut into 5 mm rounds

1 tbs               Capers  - chopped

1                    Chilli  - chopped

3 cloves           Garlic  - chopped finely

10 leaves          Mint  - chopped

20 cl                Olive oil

                      Pepper

                      Salt

 

Method

Put the aubergine slices in a strainer, sprinkle with salt and let them discharge water for 30

minutes.   Put a heavy frying pan on a high heat.  Rinse and drain the aubergines and then to

coat them with a little oil.  In the frying pan, brown them on both sides.  Let them cool a bit.

Mix the pepper, garlic, capers and mint in a bowl and add salt and pepper. 

Put a layer of aubergine slices in a bowl and sprinkle them with some of the chilli and herb

mixture.  Then put on a new layer aubergines and chilli mixture.  Continue until all  the

ingredients have been used up.  Sprinkle with the olive oil, chill and to let the dish marinate for a minimum of 6 hours.
