Avocado mousse with smoked cod's roe is a colourful and extremely tasty starter.  It is recommended serving it in glass ramekins or glasses so that the two contrasting colours of the avocado mousse and the smoked cod’s roe can be seen.

Ingredients

For 6 servings…

For the smoked cod's roe

230 gms          Smoked cod's roe     

1 clove            Garlic  - peeled        

1 slice             Bread  - white, crusts removed 

2 tbs               Cream  - thin          

6 tbs               Olive oil    

2 tbs               Lemon juice            

                      Pepper  - freshly ground, black 

For the avacado mousse

3                    Avacados   

170 ml             Mayonnaise

60 ml              Sherry  - dry

                      Pepper      

                      Salt          

To decorate

                      Olives  - black, seeded

                      Paprika     

Method

To prepare the cod’s roe…

Pound the smoked cod’s roe into a paste with the garlic.  Soak the bread in the cream, squeeze dry and then beat into the cod’s roe.   Beat in the olive oil gradually, alternating with the lemon juice.

Season with freshly-ground pepper.  Refrigerate.

To prepare the avocado mousse…

Cut three ripe avocados in half and scoop out the flesh.  Beat this the mayonnaise to form a stiff cream.  Fold in the sherry.  Season.

To assemble the dish…

Spread cod’s roe over the bottom of glass ramekins dishes or suitable glasses.  Cover with the avocado mousse.  Decorate with the olives and dust lightly with paprika.
