Spinach Catalan can be served as a starter, tapas dish or as a supper dish.  It is a delicious and slightly unusual way of serving spinach.  It picks up flavours from with garlic, lemon juice and pine nuts.

Preparation Time: 10 Mins

Cooking Time: 10 Mins

Total Time: 20 Mins

Ingredients

For 2 servings…

450 gms          Spinach     

                      Salt          

40 gms            Butter       

1 clove            Garlic  - crushed      

½                   Lemon  - juice of      

30 gms            Raisins      

                      Pepper  - freshly ground, black 

30 gms            Pine nuts   

To serve

2 slices            Toast       

Method

Wash the spinach well and blanch it in a pan of boiling salted water.  Drain and press out the liquid. Melt the butter in a pan and in it fry lightly a crushed clove of garlic and then allow the spinach to cook until tender in the butter.  Add the lemon juice and raisins and black pepper.  Separately fry the of pine nuts until golden and mix into the spinach mixture.  Serve with toast, dipped in butter in which a clove of garlic has been gently fried.

Wine recommendations

Best with a white wine or light red.
