Many different sauces accompany asparagus extremely well.  This mustard sauce is up with the best of them.  The sauce is basically a vinaigrette but flavoured with mustard anchovies and capers.

Preparation Time: 15 Mins

Cooking Time: 7 Mins

Total Time: 25 Mins

Ingredients

For 4 servings…

450 gms          Asparagus  

For the sauce

10 cl               Olive oil    

2 tbs               Vinegar  - white wine 

1 tsp               Mustard  - Dijon      

                Anchovies  - chopped finely     

½ tbs             Capers  - chopped finely         

1 tbs               Parsley  - chopped    

  Salt              

Method

Trim the asparagus and cook in boiling water for 7 minutes.  Drain and allow to cool.

To make the sauce…

Put the sauce ingredient into a bowl and beat until amalgamated.

To serve…

Arrange the asparagus on a suitable dish or individual plates and drizzle over the sauce.  Serve.
