Parmesan cheese and olive oil make a totally satisfying alternative to serving asparagus with butter or hollandaise sauce.

Preparation Time: 5 Mins

Cooking Time: 4 Mins

Total Time: 10 Mins

Ingredients

For 2 servings…

                     Salt  - flakes

12 spears         Asparagus  - woody ends removed         

4 tbs               Olive oil     

 gms               Parmesan cheese  - slithers     

                     Pepper  - freshly ground, black  

Method

Bring some well-salted water to the boil in a shallow wide pan, add the asparagus and cook for 4 minutes until just tender.

Lift the asparagus out of the water, drain well and divide been 2 plates.  Drizzle 2 tablespoons of oil over each one and then shave over 6 thin slithers of Parmesan.  Sprinkle with a few sea-salt flakes and some black pepper.  Serve immediately.
