This is an interesting, but simple way of cooking asparagus. Well worth a try. Preparation Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins Ingredients For 4 servings… 2 bunches Asparagus 1 bunch Spring onions - halved lengthways 3 tbs Olive oil 1 Lemon - zest and juice of Pepper Salt 1 bunch Dill - chopped roughly Method Heat an oven to maximum. In a large mixing bowl, combine the asparagus, spring onions, olive oil and lemon zest along with some salt and pepper. Spread the asparagus and spring onions out on a large baking tray in an even layer. Roast for 10 minutes, until soft and charred in places. Remove from the heat and immediately sprinkle with the lemon juice. Check the seasoning, adding more salt or pepper if necessary. Add the dill and gently mix together. Serve on a large platter.
