The yoghurt sauce adds an exciting taste to the broccoli.  The recipe works both with green broccoli and purple sprouting.  The broccoli is fantastic hot and also good, cold, as a salad.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 15 Mins

Ingredients

For 4 portions

450 gms          Broccoli     

                      Salt          

For the sauce

1                    Chilli  - red, hot, dried - chopped

1 clove            Garlic  - chopped     

1 pinch            Mustard  - powder    

1 branch          Parsley  - chopped    

                      Salt          

1 tbs               Yoghurt     

Method

Steam or blanche the broccoli for a few minutes in boiling salt water until cooked.  Drain well and transfer it to a serving dish.

Mix the parsley, garlic, pepper and yoghurt in a bowl.   Incorporate the mustard and salt.   Blob the

broccoli with this sauce and serve.
