In this recipe the cabbage is first boiled and them cooked with olive oil infused with garlic and flavoured with anchovies.  It is more interesting than cabbage that has been simply boiled.

The recipe can be used for cooking curly kale.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

˝                   Cabbage  - Savoy, chopped up 

                     Salt          

1 tbs               Olive oil    

2                    Garlic  - peeled        

2                    Anchovies  - chopped

1 tbs               Parsley  - chopped    

                     Pepper      

Method

Cook the cabbage for a few minutes in boiling salted water and then drain well.

Heat the oil in a frying pan, add the whole garlic cloves and cook for a few minutes until browned.  Then remove and discard them.  Place the anchovies in the frying pan and sauté them – squeezing them with a wooden spoon, until almost a mash.  Add the cabbage, parsley, salt and pepper.  Cook for at least 10 minutes – stirring from time to time.
