This is a delicious way of cooking new-season courgettes.  It can be served to accompany meat or as a tapas dish.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 15 Mins

Ingredients

For 2 servings…

1                    Egg          

2 tbs               Flour        

                      Milk         

40 gms            Butter       

6                    Courgettes  - Sliced thinly lengthwise      

                      Pepper  - freshly ground, black 

                      Salt          

          

Method

Break the egg into a basin and stir in the flour.  Gradually, using a whisk, beat in milk until the mixture has a cream consistency.

Pour the batter into a soup plate.  Melt the butter in a frying pan until it is smoking-hot.  Dip the courgette slices into the batter and fry them in the butter for 3 minutes on one side and 2 minutes on the other.  Sprinkle them with salt and a little freshly-milled pepper and serve them on a hot dish.
