Courgettes with fresh herbs |

This courgette dish is simplicity itself and is marvellous with veal, chicken, steak or lamb or as a separate tapas dish. Preparation Time: 10 Mins Cooking Time: 20 Mins Total Time: 30 Mins Ingredients For 3 servings… 450 gms Courgettes - sliced thinly into rounds Salt 30 gms Butter 1 tbs Herbs - parsley, chervil or chives - chopped finely 1 squeeze Lemon juice Method Sprinkle the courgettes with salt and leave in a colander with a plate and a weight on top for an hour so that excess moisture drains off. Put them in a saucepan with a ladle of water and cook them gently for 10 minutes. Drain. Heat the butter in a frying-pan and gently cook the courgettes. Turn them over once or twice and shake the pan so that they do not stick. When they are tender, stir in the herbs and the lemon juice.
