Cooking courgettes with onions and oregano significantly enhances their flavour to produce a very respectable vegetable dish. This recipe comes from Murcia in Spain. It can be eaten hot or cold. Preparation Time: 10 Mins Cooking Time: 55 Mins Total Time: 65 Mins Ingredients For 6 servings… 1 Onion - halved and sliced 4 tbs Olive oil 1 kg Courgettes - sliced thinly Salt 1 tsb Oregano Method Fry the onion in the oil in a large frying pan over a very low heat, stirring often, for about 15 minutes until soft and golden. Add the courgettes and cook for about 30 minutes over a low heat, turning them over occasionally. Sprinkle with salt and the oregano. Cover the pan with a lid or a large piece of foil and cook for another 10 minutes.
