Stir-frying is a very quick method of cooking courgettes (in fact, any young vegetable. It is simple and tastes delicious. Preparation Time: 5 Mins Cooking Time: 5 Mins Total Time: 10 Mins Ingredients For 4 servings… 10 gms Butter 450 gms Courgettes - small, cut into quarters lengthways and then into 3 cm lengths 1 tbs Parsley - chopped finely Pepper Salt 2 tbs Water Method Heat the butter in a wok and, when very hot, toss in the courgettes and stir-fry for about 2 minutes. Season with salt and pepper and, as the edges begin to brown, add the water and cover immediately. Cook over high heat, shaking hard from time to time for 2 minutes. Remove the lid. The courgettes should be a bright jade green, cooked but still very crisp and the moisture mostly gone. If there is moisture left, boil fast with the lid off to evaporate the excess liquid. Serve at once, sprinkled with the parsley.
