If you grow courgettes you inevitably finish up with a surplus and need to find different ways of serving them up. This way, with tomatoes, oregano and basil, produces flavours of Italy. It is an excellent accompaniment for fish or meat or can be served, cold, as an hors d’œuvre. Preparation Time: 5 Mins Cooking Time: 15 Mins Total Time: 3¼ Hrs Ingredients For 2 servings… ½ kg Courgettes - cut across into slices Flour tbs Olive oil 200 gms Tomatoes - chopped 2 tsp Oregano 1 branch Basil - chopped Pepper Salt Method Put the courgette slices into a tea towel and let them drain at 3 hours. Flour them, shaking off any excess. Heat the oil in a large pan. Add the courgette slices and cook them for about 5 minutes on each side until golden. Add the tomatoes, oregano and basil and cook for about three minutes, on a medium heat, shaking the pan from time to time. Season and then transfer to a serving dish.
