Gratin Dauphinois is a tradition regional French way of cooking potatoes from the historic Dauphiné region in south-east France. Although the recipes do vary the essence is that the potatoes are cooked in casserole with milk or cream and cheese.

Ingredients For 6 portions 10 gms Butter 1 Egg - beaten 1 clove Garlic - crushed with salt 30 cl Milk Nutmeg - grated 30 gms Parmesan cheese - grated Pepper 450 gms Potatoes - sliced thinly Salt
Method Butter an oven-proof dish and then spread in it the crushed garlic. Lay the potatoes in the dish in regular rows, seasoning between each row with salt, pepper, grated nutmeg and cheese. Bring the milk to the boil, pour it into the egg and stir. Pour the mixture over the potatoes, dot with small pieces of butter and a little grated cheese. Bake in a moderately hot oven (180°C) for three-quarters of an hour.
