This is a simple salad suitable for accompanying cold meats and, in particularly, poultry and game. It can also be served as an hors d’œuvre. Preparation Time: 20 Mins Cooking Time: 15 Mins Total Time: 45 Mins Ingredients For 4 servings… 340 gms Jerusalem artichokes - peeled Salt Pepper 2 tbs Olive oil 1 tsp Vinegar - white wine 1 stick Celery - sliced 1 tbs Parsley - chopped 1 clove Garlic - crushed 1 tbs Ham - chopped Method Put the artichokes in cold salted water and simmer them gently until just soft. While still warm, slice them, put them in a suitable bowl and season them with salt, pepper, the olive oil and vinegar. Mix in the celery, parsley and garlic. Sprinkle a layer of chopped ham on top and serve immediately. Variations The white wine vinegar can be replaced with Balsamic vinegar or lemon juice.
