Charred leeks with crème fraîche is a quick way delicious way of serving leeks.  It makes an excellent vegetable side dish but can also be served as a tapas dish.

Preparation Time: 10 Mins

Cooking Time: 7 Mins

Total Time: 17 Mins

Ingredients

For 6 servings…

280 gms          Leeks       

2 tbs               Olive oil    

                      Salt          

4 tbs               Crème fraîche          

½ tsp             Paprika     

1                    Lemon  - zest of      

Method

Heat up a griddle pan until it is hot.

Blanch the leeks for one minute in a pan of boiling water.  Drain them, paint them with olive oil and season them with salt.

Cook the leeks on the griddle pan for 5-6 minutes, turning them halfway through, so that they are charred and tender.

Transfer the leeks to a serving plate and dot with the crème fraiche.  Drizzle over a little oil and sprinkle them with paprika and lemon zest.

Serve immediately.
