Leeks are very nice cooked au naturel, but this recipe adds a lot of additional flavours.  A very decent dish to accompany hot meats and game!

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

                     Salt          

4                    Leeks  - trimmed and cut into 5 cm lengths

125 gms          Butter       

3 tsp               Mustard  - whole grain

2 cloves           Garlic  - chopped     

1 tbs               Capers      

1 tsp               Sugar  - muscovado  

                     Pepper      

Method

Fill three quarters of a saucepan with well-salted water and bring to the boil over a medium heat and put in the leeks.  Simmer for 10 minutes until soft.  Then take out them and refresh them in cold water five minutes to keep their colour vibrant.

While the leeks are chilling, melt the butter in a saucepan.  Stir in the mustard, garlic, capers, sugar and seasoning.

Toss the leeks in the mustard-butter mixture for about four minutes to soften them further and so they get coated in the sauce. Taste to check seasoning and serve.
