Honey roasting is a lovely way to cook parsnips. It leaves them nice and crisp on the outside and soft and sweet on the inside. Preparation Time: 10 Mins Cooking Time: 40 Mins Total Time: 50 Mins Ingredients For 4 portions 2 tsp Honey - runny 1 tbs Olive oil 2 Parsnips - quartered Pepper - freshly ground, black Salt 2 sprigs Thyme Method Preheat an oven to 200°C. Place the parsnips in a roasting tin and drizzle with olive oil. Toss them around to coat evenly with oil. Roast for 20 minutes. Drizzle with honey and sprinkle on the thyme leaves. Season with salt and pepper; return to oven and cook for an additional 20 minutes or until the parsnips have started to caramelise and turned a golden-brown colour.
