This dish of peas has a delicate flavour and a sauce of a creamy consistency.  It can be served as an accompaniment to meat or fish or as a separate dish, in which case increase the quantities.

Ingredients

For 4 servings…

˝                   Lettuce  - Little Gem, shredded 

450 gms          Peas         

                     Salt          

˝ tsp             Sugar       

40 gms            Butter       

Method

Put the lettuce with the peas, a little salt and a lump of sugar, in sufficient boiling water just to cover the peas.  Cook uncovered until they are barely tender.  Drain them.  Return them to the saucepan with the butter and let the peas and lettuce stew gently in this butter for a few minutes.
