Potatoes à la Landaise are potatoes cooked in the style of the Landes region in South-West France. 

The potatoes are fried in goose fat with onion and Bayonne ham and flavoured with garlic.

Preparation Time             10  Mins

Cooking Time                 30  Mins

Elapsed Time                 40  Mins

Ingredients

For     6  portions

3 tbs               Fat  - goose

3 cloves           Garlic  - chopped finely

185 gms           Ham  - Bayonne

2                    Onions  - chopped finely

                      Pepper

750 gms           Potatoes  - cut into dice

                      Salt

Method

Heat the oil in a large frying pan with a lid.

Fry the onions and the ham until both are well browned.  Add the potatoes and season with salt and

pepper.  Cook with the lid on for 20 minutes stirring from time to time.  When the potatoes are cooked, add the garlic and mix well.  Serve.
